Wine type: red Alcohol content: 13.5% by volume Variety: Merlot Trained to a single cordon. Planting density 3,100 vines per hectare; production of about 100,000 kg/ha. Soil of average texture. Vinification: Merlot is generally harvested during the middle 10 days of September. The grapes are fermented in steel tanks, and macerated for 12-15 days at a temperature of 24°C. Matured in steel tanks and oak barrels for 12-18 months. Colour: intense ruby red, garnet hints with ageing. Nose: evokes ripe red fruit (bilberry, raspberry and cherry), which blends with spiced notes, notably the scent of cocoa, black pepper and liquorice. Palate: Intense, dry flavour, lingering and with slight tannin. Pairing: roast meat, game, meat stews, mature cheeses. |
